Another day, another recipe! I really hope you guys like food because whilst I’m spending a little less time travelling in the lead up to London Marathon, I’m spending more time in in the kitchen! This one is an easy peasy healthy lunch or dinner one. A puy lentil, roasted carrot, and feta salad, with cumin and Manuka honey. It’s colourful, it’s quick and it’s full of goodness. Oh, and it’s perfect for packed lunches too. You can make a batch on Sunday night and you’re good to go for the week.
It’s my take on a recipe in this month’s BBC Good Food magazine — having noticed my newfangled passion for baking(!) Ed went out and bought me a copy… cute, huh?! Anyway, with roast vegetables and cheese, it had my name all over it, so here we go. It ain’t nothin’ fancy, just healthy, fresh deliciousness that might hopefully inspire a lunch…
Carrots (and/or sweet potato — works just as well)
Honey (here, I'm using Australian Manuka Honey)
Peel, boil and roast your carrots — dust them with ground cumin and a splash of olive oil before they go in the oven. I didn’t have enough carrots so added some sweet potato to the mix too. Whilst they’re roasting, cook your puy lentils. 40g lentils is roughly one serving… Wash them thoroughly then let them simmer for 25 minutes, before draining and cooling.
Once the carrots are roasted, let them cool for a bit then combine them with the lentils and a crumbled block of feta cheese — as much as you fancy really. If you’re up for less washing up, you can keep it easy and do this all on the roasting tray!
Time to add the deliciousness…honey! I’m using Real Health Australian Manuka Honey here, which is 100% raw and unblended. Chop up some cucumber and salad — maybe avocado too if you have some…
If you or your dining buddies eat meat, you might want to fry up some crispy bacon…
Finally, toss the whole lot together, add a little extra drizzle of honey if you’re feeling it and voila!
