I’m back! And I’m reviving a two-week blog break with a new recipe! It’s just over one week to go now ‘till London Marathon now (argh!) so baked goods (and all carbs actually) are my friends right now. Cue...carrot and date loaf! Damn tasty if I do say so myself, super easy and mega cheap to make, and the perfect anytime snack — I’m loving it for breakfast I’ve got to say… If you liked the banana bread recipe I shared a few weeks back, I think you’re going to love this just as much. 1 ½ cup wholemeal flour
1 and ½ cups grated carrot
½ cup soft brown sugar
⅓ cup butter or oil (I used olive oil, but I reckon coconut oil is a better shout...)
½ tsp baking soda
½ tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
½ cup of dates
Get your oven on, at around 170 degrees. Mix together the oil and the sugar.
Add the eggs, vanilla essence and grated carrot.
Add the dry ingredients and mix well.
If you’re adding them, stir in your chopped dates or walnuts (or both maybe).
Grease your loaf tin and pour in the mixture evenly. Maybe you want to sprinkle with a few oats on top like I did (mainly for that homemade aesthetic).
Bake for around 45 minutes, until it’s looking golden and voila, delicious carrot and date loaf ready to enjoy warm...
