Looking for new lunch box inspo? This colourful, chilli noodle combo will take 5 minutes to make and is sure to brighten up even the dullest of lunch breaks. So much better than a supermarket sarnie, it’s full of goodness, vitamins and healthy fats that are going to keep you fuelled up ’til dinner.
I talked in a recent post about how i’m really focusing to make more packed lunches this year (both to save money and feel more satisfied), so I thought I’d also try to share a few more ideas on here. There’s really not a lot to it so it’s not so much a recipe to follow as much as it is an idea to pin and try for later (you guys loved it on Stories so I thought I'd make it permanent on here!).
Just wok-fry a tonne of veggies in a spoonful of coconut oil — peppers, mushrooms, mangetouts, and courgettes work really well.
When they're soft, add noodles.
Stir in a spoonful of peanut butter, followed by a generous teaspoon of fiery chilli oil.
Sprinkle with chopped spring onions and sesame seeds and voila, you're done!
